Sourdough Pizza Crust

If you were to ask me what my favorite food is (besides sushi, of course), I would hands-down say Pizza! Its crispy, soft, savory and has all the right toppings, its literally just the best comfort food ever. So, I've always wanted to master the craft of homemade pizza, never was I able to until I had my own sourdough starter. This is my favorite kind of pizza, simple, rustic, deep flavor in the crust and so easy to make! I hope you enjoy this recipe and it helps use up some of your starter!

PIZZA DOUGH INGREDIENTS:

  • 1.5 cup sourdough starter discard

  • 2 tbsp olive oil

  • 3/4 cup water heated (not boiling but hot)

  • 3 3/4 cup bread flour (or unbleached all-purpose)

  • 1 tbsp honey (or sugar)

  • 1.5 tsp salt

  • Toppings for pizza

UTENSILS:

  • Stand mixer with dough hook (optional)

  • Large bowl

  • Lid for bowl, plastic wrap or tea towel

  • Pizza stone (optional but highly recommended)

  • Pizza Peel

STEP 1:

 

TO MIX IN A STAND MIXER

In the bowl of a stand mixer, combine the sourdough starter, the hot water, oil, and honey. Add the flour & salt.

TO MIX BY HAND

Combine the ingredients in the order listed in a large bowl. Stir the dough until it forms a rough ball.

STEP 2:

​

Using the bread hook, knead the dough until a smooth, elastic dough forms. If the dough isn't cohesive, add a few more tablespoons of water to achieve this.

STEP 3:

 

NEXT STEP FOR BOTH MIXING METHODS:

Transfer dough to a lightly floured surface and knead until a smooth, elastic dough forms.

STEP 4:

 

IF MAKING PIZZA SAME DAY

Transfer dough to a greased bowl. Cover with a lid or plastic wrap and let rise at room temp until it's doubled in size or for 6-8 hours.

IF MAKING NEXT DAY OR WITHIN 48 HOURS

Transfer dough to a greased bowl. Cover with a lid or plastic wrap and put in refrigerator until the morning of the day you want to make pizza with it. Then 6-8 hours before making your pizza, remove from refrigerator and let sit on the counter.

STEP 5:

Preheat oven to 475 & make sure if using a pizza stone that it is in there preheating with the oven the entire time. If you want extra crispy crust, let it sit in the oven for a minimum of 30 minutes at full temp before baking.

STEP 6:

Stretch each dough ball into a large round flat surface and place on a floured pizza peel or greased pizza screen/cookie sheet if not baking on a pizza stone.

STEP 7:

Add your toppings and bake on the pizza stone until the crust is crispy and toppings are cooked, about 10-15 minutes (depending on your oven). Enjoy!
